Chef Joan was educated at The International Culinary Schools at the Art Institute of Atlanta and Georgia Northwestern in Rome, Ga. She received her Associates Degree in July of 2013. After graduation, she spent time in New Orleans apprenticing under some of the best known chefs and restaurateurs in the city. She worked at Borgne, Luke, and Restaurant Revolution.
Chef Joan and her husband, Dereck, started a food truck in December, 2011. After three and a half years serving lunches from the truck and doing numerous caterings along the way, the decision was made to open a brick and mortar. The restaurant opened in August, 2015. Crawdaddy's won Best Food Truck from the Rome News Tribune Reader's Poll three years in a row and Chef Joan is the reigning Best Chef in that particular category.
Her passion for the Cajun and Creole culture and food was ignited after living in the heart of Cajun country, - Lafayette, Louisiana! She became so intrigued with the food that she continued to hone her skills in the fine art of the cuisine long after leaving Louisiana.
Her attention to detail in the preparation methods of the cuisine is evident in every bite! From the house made Remoulade, to her perfectly prepared roux which is the foundation for her gumbos, and fresh Gulf seafood, you are sure to become a fan of this delicious cuisine! Only the freshest, wild caught, Gulf seafood makes it to the plate at Crawdaddy's! We strive daily to source our seafood directly from the fishermen who fish the waters of the Gulf. We work closely with the Louisiana Department of Agriculture in securing the absolute best Louisiana and it's rich waters have to offer.
